Title: Need some recommendations on Cajun Food.

I'm in Shreveport for a few weeks, a displaced Okie.

I need some help on what is "Cajun" food.  Do ya'll always eat bait?  Not that eatin bait is wrong.  Lord knows I've dipped into the minnow bucket a few times when others wern't lookin.

Question I have is "What can you recommend?"  I like spicey stuff and if it doesn't make me sweat then it isn't spicey.  What is "Blackened?"  I've made "Blackened" stuff before, all accidents.

I would like to expierience the Cajun courses yet have no idea on what is what.

First off, get yourself an oyster poor boy and use some tabasco. I think you'll like that one.

You'll need to check the crawfish box too; etouffe is good but not necessarily hot.

Try some boudin; it's sausage and again it's not necessarily hot. You can get "hot links" though that usually will pop a sweat.

Duck and sausage gumbo is always good. You many not find duck but there will be some gumbo with the andouille sausage in it. Give it a try.

Some morning you'll need to find a beignet shop (fried donut with confectioner's sugar) and have coffee and a beignet.

Try those, see what you think. Cajun isn't always real spicy right off. That's why they always have bottles of tabasco or pepper vinegar on the tables.

They have a resturant near me called "Becca's". I got a somewhat Hotel copy of the menu.

I'm seeing Etoffee, Jambalaya, Tails and Crawfish Pie... and I see Gumbo, Frog Legs and Blackened Gator.

Gonna try a Seafood Platter and see what happens tomorrow.  The gator sounds good. Had Gator in OK.

They have a chitload of Shrimp listed... I'm thinkin Bubba Gump!

I managed to find a cajun restaurant of sorts up here at a tiny little airfield pilots' lounge type place.  The alligator and frog legs were pretty good - the crawfish not so much.

But then again I'm willing to bet that it'll be better where you are than up here.

Anyway, try a "swamp medley" or whatever they'll call it down there...  Get a taste of everything instead of committing to just one...  There's quite a range of tastes and you might not like all of 'em.

South American swamp rats; I've heard they're pretty good but I've never had the opportunity. If it wasn't good...there's always tabasco!

I was thinking Gator... maybe the Frog Legs too.

Just sitting here, sleeping and eating, waiting for work to do and filing timesheets and expense reports. Boring.  Don't get me wrong, this is sweet.  Rental vehicle is a 2007 Suburban, all the bells and whistles, Hotel is okay, La Quinta. Unlimited expenses on food and crap.  Just wanted to expierience the "Cajun" side of food.

Had some Catfish today at Lunch... Good stuff!!!!

In my few experiences with crawfish, it's been similar to shrimp when cooked in a dish out of the shell.  I've never sucked the heads out or anything.  As for gator, delicious.  I thought it was like fish with a firmer texture personally.  The other stuff I can't tell you about but it sounds delicious.

Nutria is a large water rodent that city-slickers and modern urbanites might mistake for a beaver.

Reportedly good eating.  

But ya can't eat it unless ya kill it yourself.

My mistake Scortch sorry bud.

The rats remind me of the Wharf Rats in Baltimore...  I was up there doing work for Williams Communicatons.  The guy I had with me was a N00B.

We finished work around 4am, tired, long night. We came out and this N00B sez.. "Hey look at all the Chiahuahas..."

I corrected him. "Dude look again, them are Rats!"  He freaked.

Welp, Mac, nutria aint wharf rats my man.  I've seen some that would weigh around twenty pounds.

Fortunately, they're not carnivorous like common rats.  :D

damn good eating with potatos red beans and rice. nice pelt too.  we used to eat it in cuba where it's known as jutia, (pronounced who T ah)

"Blackening" describes a searing process whereby a spicy seasoning mix is applied to meat, chicken or fish, which is then seared in a hot cast iron pan.

The trick is to create a crisp exterior without burning the spice-herb mixture which then becomes bitter. Cast iron is used primarily due to the fact that it holds heat well. Contrary to popular belief, you don't have to get the pan "roaring" hot. A 3-4 minute pre heat over high flame will do the trick.

Two tricks I can offer...1.)  use rather thin cuts of whatever you wish to Blacken...no more than 1/2"  2.) Have the cuts at room temp.

Do not use butter or olive oil to the pan; they will smoke and burn. Add 1 Tbsp of   vegetable oil just before adding the meat.  If you do not have a POWERFUL hood fan over your range, do not attempt to do this indoors as you will have a house full of smoke.

As for spice blends, I prefer Paul Prudhomme brand. You can also google up a bunch on your own.

IMO jumbalaya is the way to go.  You can get that stuff as hot as you want, and it's fantastic.

BTW, blackened refers to a spice mixture, and can get pretty spicy.

Straffo, origin of "CAJUN" = French Acadians, those in New Brunswick(province of Canada) that got kicked out by the King at the time...

most couldn't pronounce Acadian, say it in English...:)

Just had the Crawfish Feast which was Etouffee, Jambalaya, Tails and Crawfish Pie.  Washed it down with an ice cold Miller Lite.

Mmmmmmmmmm.... Good stuff.  I think I hurt myself cuz I just woke up an hour later.

Shreveport?! Son, anything north of Baton Rouge is considered Arkansas. If you want Cajun food you need to go way south. Lafayette would be a good stop for authentic Cajun food. Look up T'Coon's restaurant and get the rabbit fricassee or get the shrimp poboy from City Garden Market. Shreveport...man that ain't cajun!

crawfish too, find a place where you can order 'em by the pound.  :)
