which plane would be an excellent choice to deal with zekes, 109 and 190's?

Any plane can deal with zekes, 190s, and 109s.
Any of the top 5 "uber" planes can handle them easily (Spit16, La7, N1k2, P51D, F4u's)

Historically, most of the American planes set came out ahead of those planes you listed. Spits too. And La's. Yaks.......
What kind of fight do you favor? Turn and burn, energy fight, boom and zoom?
When you know how you fight better, and your approximate skill level, that can help you choose a suitable plane for the occasion.

Heh. You've picked three very different kinds of fights, and very few planes will be good at all of them.
The Spit, for sure, is the best all-around plane. In the set you name, the Spit 8 or 9 can handle them all. Pick the 5 if you want to hone your skills. Pick the Spit I if you're daring.
In-the-mud knife fighting - i.e., matching turns against the zeke - you will probably require a Hurri I, possibly a IIC, or an FM2. If you're talented, try the Wildcat.
Floor is open against the 109. It is one of the most versatile planes in the game, so it has lots of good opponents. 38s v 109s is always a good fight. 47s, also, if the 47 driver pays attention. The Yak 9T is a lot of fun against most of the 109s. Spits will dominate (as always), 51s will get killed unless they play b&z.
The 190s cover three different fights themselves. Against the A5, I think the 38G is a great fight. Any plane that can top 250 in a dive (other than the P40B) should be able to beat the A8. D9 needs a 51 or a Typhoon for a good fight.
Just my input, sort of restricted to the Allies v. Axis perspective. Others will have very useful opinions, I'm sure.

F4U will generally handle any of them.
The only thing the Zeke really has on the Hog is low-speed turning. As long as the F4U stays out of that game, that Zeke should be a fireball more often than not.
The only really clear advantage the 190s have is top speed at low altitude (and that's really limited to the Dora). The F4U rolls just as well, and is far superior in the turn, especially once flaps come in to play.
F4U will generally handle most of the 109s reasonably well in a fast, open engagement as she has a KILLER zoom. Except for the 109F she'll hang in there decently in a turning fight with careful use of flaps. What makes the 109s the toughest of the three for the Hog is their insane vertical at low speeds, especially the K, so if the fight gets slow you want to try and keep the fight more level or nose-low.
