I was wondering if a collision model for GVs will be made in relation to tanks being hit by aircraft, tanks ramming into buildings, structures and other vehicles? Realistically, no reason a tank could not roll thru a town building, run over a jeep or take damage from an airplane slamming into it.

I no reason a tank could (...) take damage from an airplane slamming into it.
I see some problems with this. People fly just a few feet over the enemy tank, then drop a few additional feet just as they pass over it. Chances are very good that on the pilots FE he passed the GV without harm, yet on the tankers FE he slams right into the tank.
Result: A voluntary ram which only hurts the GV. And unlike a plane, a Panzer or Firefly can neither hope to dodge nor to shoot down the attacker.

You really think that if a 3,000 lb airplane runs into the top turret at 300 mph that NOTHING is going to be bent, broken, strained, wrenched, torqued, twisted, mangled out of position, etc? If that turret turns at all I bet it is never as smooth or quick as it was before the impact.
For one thing if it happened for real the tank would probably end up laying on its side.
Yes tanks should roll over bushes, small trees, lightly built buildings, etc without takeing damage. That far I'll agree with you.
As for taking damage from a low flying plane, roll the dice 1 - 4 gets off no damage, 1 - 4 takes fatal damage, and a couple of light to moderate damage in the middle which are fixable with supplys.

I've been told there's no collision damage for the GV's is because of lag.
A tankdriver could be rolling along, passing another tank and suddenly bump into him.
Due to lag, the driver sees the other tank somewhere else than it actually is, thus frustrating the both drivers :)

I heard it was because of the squirrels.
