Tortillas are no more important to the Mexicans than bread is to the Russians. You take any staple food away from folks who already have very little and you are going to get a problem.

If I knew how to make them from scratch, I'd be queen of the house for sure. Alas, I have to buy them, since I always hose it up somehow.

read the reviews at bottom of recipes for tips too.  

tip:
know the difference between baking powder and baking soda. they are not the same and switching one for the other can make a nasty tasting gagging something.

thats for sure, and not only for tortillas.  One day several (many many moons) years ago I was whipping up some pancakes for breakfast.  Mixed it all up, heat up the griddle, pour on the pancakes.  Pretty soon I'm smelling something that smells like burning hair... yew...  where could that smell be comin from... wife comes strollin into the kitchen, whats that smell??!  I check out the pancakes,  OMG they stink.... why?:confused: ,  look at the counter and see the box of baking soda,...:eek:  never made that mistake again...:cool:

Tortillas

serving size

Makes 8 large tortillas...or 12 smaller ones

ingredients

4 cups all-purpose flour (or 3 cups all-purpose and 1 cup whole wheat)
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup canola oil
1 1/2 cups warm water (or enough to make the dough the right consistency) preparation
In a large mixing bowl, combine all of the ingredients and 1/2 of the water. Mix together with your hands and continue adding water into the dough until it forms a solid ball, but is not too sticky. If necessary, add additional flour or water as needed. Knead the dough on a floured board for 5 minutes. Cut the dough in half and then in half again, continuing the process until you have 8 equal portions. Roll each piece into a ball, place them on a lightly floured surface, and cover with a damp towel.
Heat a griddle or cast iron pan to medium heat. Roll out the dough, one piece at a time to about 1/4 inch thickness. Place one round of dough on the griddle and cook on each side for about 30 seconds. Take care that the griddle is not too hot or the tortillas will scorch. Continue the process with the remaining 7 portions of dough.

Give yourself a couple of times making these and you will be a PRO in no time!

As a former casino marketing director, was VERY lucky to work with my head chef for 3 years.

Not only got plenty of recipies, but great advice from a former Marine Nam Vet.

That's the recipe for gorditas, not the regular thin flour tortillas. The thin ones are way thinner than a 1/4 inch. The recipe you have is more like fry bread, another good thing to eat. ;)

For the thin tortillas they are stretched by hand until they are almost translucent then very quickly cooked on a very hot cast iron griddle. It's hotter than would be used for pancakes. They are also made with lard, flour and just a touch of salt.

Most people don't like to make the very thin ones at home (cooking them in quantity tends to take a toll on the fingers), but you are indeed correct, (my bad for grabbing the wrong one in a hurry)!

I humbly stand correctred!

Many AUTHENTIC Mexican restaraunts in the US do not offer Chicken Mole on the menu yet, as it has yet to get a following here....except for the oil, this is a VERY healthy, low-fat meal.

So...as my Pentance:

CHICKEN MOLE

       8    Chicken breasts (skinned & de-fatted)
     1/4 c  Olive oil
       1 cn Chopped green chiles (small)
       1    Onion; chopped
       1    Clove garlic; minced (Personally I use 2)
       8 oz Tomato sauce
       1 c  Chicken broth
       2 ts Chile powder  (I use 3)
       1 ts Salt
       2 tb Sugar (Brown has a better flavor)
     1/4 ts Tabasco
       2    Whole cloves  (remember to remove before serving)
       1 oz Unsweetened baking chocolate
       2 tb Creamy peanut butter
       Rice; cooked, hot
 
   Brown chicken in oil and remove. Saute onion and garlic and Add green
   chiles. Add remaining ingredients. Stir until chocolate is melted.  Shred
   the cooked chicken.  Replace chicken and cook over low heat for 30
   minutes. Serve over cooked rice with tortillas.

   Optional:  Serve garnished with 1 very finely diced (seeded) jalepeno
   with sour cream on the side.

Pestilence and pox on you!!!!:mad:  Tortillas, REAL ones are made by hand, stretched on the forearms of the cook to get the right size and thickness then gentlyplaced on the griddle and quickly flipped to get the other side cooked. Once done they are absolutely the best with a little butter spread on them, rolled and eaten still warm. OH MY!!!! I am SO hungry for a good tortilla now..... :cry I am so glad we are headed to San Antonio this weekend so I can get a couple dozen. There aren't any tortillarias in Louisiana. :mad

No problem at all, there are different kinds of tortillas. I got a real shock when in Panama I asked for tortillas and was given a corn meal cake about a half inch thick and about 4 inches across. :confused:

I just grew up with the traditional Sonoran style harina tortillas and saw them made many many times both at home and at the relatives house. If there were tortillas being made I was close by with the butter and a knife.:D
