Title: Christmas Dinners?

What did you cook for Christmas eve or what are you having for Christmas day dinners?

I cooked up four Canadian geese that my oldest and I shot earlier last month using two different recipes serving 14 people.

Wild goose pics before and after below: First set of pics is Goose stuffed with apples, wrapped in bacon, with Merlot wine, tarragon, peppercorns. After its finished, the bacon is removed and a Mimosa Orange glazed is applied with tangerines to top it.

These are breasted Wild goose. They are prepared as butterflied, stuffed with cream cheese and fresh jalipenos, rolled up with a outer bacon crust, then BBQ'd and drizzled with a skosh of Gran Marnier before serving:

Best part is, no leftovers! Everything was devoured

Hors d'oeuvres

Chilled Jumbo Shrimp with Cocktail Sauce

Buffalo Wings

Brie with Carr's crackers

Main Course

Prime Rib (pre slathered with Dijon Mustard, fresh grated horseradish and peppercorns)

Chevre au gratin spuds

Asparagus Polonaise (go look it up :lol )

Wifey's Pecan Pie w Vanilla Ice Cream

Sebastiani "Cherryblock" '04 Sonoma Cabernet

Now all we need is the 17 yr old to get back so we can plow through this feast :)

I went to the house of some Italian friends last night--

squid, scungolli, scallops, conch, shrimp, ravioli etc (many things I could not pronounce)

I swear we at the table for 3+ hours!

In my family the turkey&ham get set out.. everyone descends on the table, and 15 minutes later there is nothing but bones  left behind!

I cooked prime rib last night.  Made a crust out of kosher salt, horseradish, pepper, garlic, and olive oil.  Put it on, put the meat thermometer in, cooked at 350 until it was about 125-130F internally.  Let it sit for 20, ate it w/ a bunch of other yummy stuff.

Looks like a wonderful meal Rip! Wish I could do more than burn water.

Wife is cooking traditional fixin's right now. Turkey, Ham and all the T-Givin' sides. I'm gonna eat until I blow up. It will make me smile :)

I was supposed to be doing all of the traditional meal stuff  ~ ham, turkey, all that.  

I accidentally bought a capon instead of a turkey ~ I never even heard of it until after I brought it home & TxDad chuckled.  :)  Oh well ~ smells great ~ got a good lemon & thyme basting recipe for it.  I guess we'll see how it goes.

Next year I'll know not to buy a capon (the TxFamily has been calling it the 'Al Capone')

Yesterday I made pumpkin pie, cheesecake, chocolate-pecan pie & the best fudge ever made. I'm REALLY looking forward to dessert. :)

Duck.

That's about all I get, because I'm doing South Beach again.  So I get duck and veggies.  The wife gets to add the rest of the usual fixins'  :)

Isn't that called the "7 fishes" meal?  My Mom and her Boyfriend (Italian) had the "7 fishes" dinner last night as well in FL. :)

 :lol  Actually, I dropped in the grass after finishing the bottle of Merlot that I sprinked on top of that goose before cooking....my head hurts today. :)  Never mix beer with Merlot, then do a cognac capper with a cigar, all in the same night...:cry

Cook a whole Turkey in 30 - 45 min. And it is tasty!!

Of course!  But, you're gonna have to sift through the fridge for leftovers.  Dark meat went fast..lol

My wife is from Italy (her family came over when she was young), and that's the Christmas eve meal we have at her folks.

Change the courses and sitting at the table for 3+ hours is what we used to do every Sunday afternoon at her parent's place.

My wife is a great cook, but her mother is even better....man, I do miss that since we moved from Boston.

The capon tasted great.  But not nearly as great as a turkey would have been.  Sorry, chicken just don't cut it for a christmas meal.

That list would be much shorter
But I think I covered all the major food groups..several times

Went to an itallian christening about a year or so ago.
That is not an inaccurate discription.

With Itallians. Eating isnt a meal. its a day long event. LMAO

Just prepare the turkey, slice potatoes in half, put everything in that clay pot, add a bit of olive oil, fat, rosemarin , cover it all with the upper part of clay pot and let it cook for 1 hour.Turn it only once in that hour, otherwise if you turn it often it will be "too crispy and burned".

Never tried it the way pic shows, is it frying in oil?

Yes, It sounds greasy, but it is not. The oil seals the skin of the bird and the meat does not soak any oil. VERY moist and tender.

There are Turkey frying kits you can buy. here is one. Turkey frying kit (http://www.target.com/Bayou-Classic-30-qt-Turkey-Fryer/dp/B0000BXHL1/sr=1-1/qid=1198795049/ref=sr_1_1/602-1045922-3456623?ie=UTF8&rh=k%3Aturkey%20fryer&page=1)

Just be careful, turkey fryers can be dangerous if not treated with respect. Always do this outside away from house. It is important that the pot has LOTS of extra room for the oil to expand when you put the Turkey in.

Hehe,

I already have the big pot, will try it next time i get my hands on turkey:D
I don't use peanut oil though, sunflower oil, not that there is much difference.

this year we went to the inlaws. Next year they are coming to my house and they can try the bird that I get to shoot with this new product.
