Well, it's the best pic I could find on such short notice.  But the DID skimp mightily on the mashed taters.  What does that mean?

I usually push the greenies off to the side.  If I'm really hungry I'll eat 'em.  Other than that no green stuff should be next to a nice huge pile o' mashed taters 'n chicken fried steak covered in cream gravy with texas toast on the side.

Yes, I'm from Connecticut but I enjoy a good chicken-fried steak more than anyone I know.

The trick is to use a sausage gravy and to have biscuits on the side smothered with it. I always pan sear it, dip and coat it, and only then low heat pan fry it until the thing is done.

There is nothing worse than deep fat frying chicken fried steak.

I've probably just had the sissified yankee version of it, dripping in grease and smothered in bland white gravy.  All I've ever thought what a waste of livestock.  In order to have a good enough cut to make it tasty, you might as well just throw it on the grill and cook it right.

Sluggish,  I can get a decent steak just about anywhere... chicken fried steak on the other hand is an art... it has to be done just right.. not too much batter,  not over fried,  not dried out,  and mash potatos or steak fries...  what is up with these freaking places that only have garlic mash potatos???

Airscrew is right on all counts.  Good CFS is hard to come by.  If it is done right, it can be cut with a fork.

And most white gravy from a restaurant is not prepared correctly either.

I know it's not July, and time for the "Second Annual Recipe Swap", but here goes with my mashed potatoes...YES...there is BACON and CHEESE!

As above...this goes REALLY WELL with Chicken Fried Steak.  Mushroom Gravy goes well with these potatoes.

You can use real potatoes if you want, but since that takes longer & is more labor intensive....instant works fine.

(Preheat your oven to 350)

Take half a pound of thin sliced bacon and fry it up crispy brown and set aside on a plate over a paper towel.

In a LARGE Corelware pot (or equivalent), make the ENTIRE box of instant potatoes...only use these exceptions:  split the water & milk 50/50, and add 3 T of EVOO (Extra Virgin Olive Oil).  Mix well with a hand blender and add MORE milk a little bit at a time to bring it to the consistency you like.

At this point, crunch the cooked bacon and add to the potatoes.  Finely chop 3 cloves of garlic and add it to the potatoes.  Take 5 T of chives (you can use the finely sliced green part of spring onions in a pinch) and add.  Also add one cup of shredded mozzarella cheese.  Mix well with the hand blender...adding a bit more milk, if needed.  Also toss in 2 T onion powder and 2 heaping T's of basil (or oregano--your choice).

After the mashed potatoes are the consistency you like, smooth the top with a large kitchen spoon and sprinkle mozzarella over the top until the top is covered with cheese.

Place the pot uncovered in your pre-heated oven for 8 min, or until the cheese on top is melted (like a pizza).

Drizzle a bit of EVOO or 4T of melted butter over the top & serve!

Enjoy this with your Chicken Fried Steak..and listen to your arteries harden later.

I make this every year for Thanksgiving.  If you want the "Pizza Mashed Potatoes" version let me know.

Chicken fried steak does NOT come with brown gravy. It should only have white SAUSAGE gravy and lots of it. Made with well seasoned sausage then add pepper to taste. Plain jane "vanilla" restaurant gravy is not the right stuff. Have a mound of roasted garlic mashed taters to the plate and either garlic texas toast or biscuits and you have a winner in cholesterolicide.

OK, OK, seriously...........

Was on a road trip to yankeeville.  Went to eat at a small homestyle type restaurant and I ordered the chicken fried steak.

They brought me.....








CHICKEN!

So I said "look, I ordered chicken fried steak".  To this I got the answer of, "Yeah, and its chicken, whats the problem?". :huh

Man that could get someone seriously hurt.

Large CFS , buckets of white gravy, lots of fried taters and Texas toast.
That`s the ticket.
My doc told me.........no more fried food.......period.
I told him I assumed he wasn`t  seriously including CFS in that category.
I then asked him if he was going to seriously consider giving up scotch so I would feel better about not being the only one of the two of us to give up something we loved.
He then asked me if I could at least keep down to one a week.
I asked him the same about his scotch.
He said "Yep. No problem. One bottle a week".
A happy ending to a sad story for both of us. :)

Im a Yankee, but spent 4 yrs stationed in Texas. There was a resturant chain called Grandy's..not sure if you still have them down there. They had a chicken fried steak with mashed potatoes,baked beans and biscuits. I'd always order 2 servings. Favorite football game food on Sundays.

     Fast fast...that doesnt taste fast.    Ummmm

Grandy's was a favorite of my wife and I when we just wanted something fast but wasn't the usual burger and fries routine.  A few years ago Grandy's pulled out of Houston and are mostly in the northeast part of the state.  Was the ultimate comfort food for sure.

Sutton County Steak House, in Sonora Texas.  360 miles West of San Antonio, on I-10.  Municipal airport right next to it, so you can fly in, and walk to it.  Best CFS, this side of Heaven.  Only my wife makes better, but only because her biscuits are better.  A word of advice, order the regular order.  The large is just too much, even for a guy like me.( 6'5" 350Lbs )

There is a place outside East Bernard, TX just southwest of Houston off of 59 that serves some real good CFS.  I cant remember the name of the place but its a hole in the wall greasy spoon type place.  They serve up 2 steaks stacked on the plate with a mound of mashed potatos smothered in gravy.  And they arent small steaks either....I didnt weigh them but its gotta be more than a pound of beef.
