The START menu lists "My recent documents" allowing any recent files opened or created to be viewed by anyone. Any way to disable that option? Yup, I realize that an administrative password can be assigned blocking access to any of my files.

Right click the task bar. Click properties. Click start menu tab. Click customize button. Click advanced tab. Uncheck "List my most recently opened documents".

If you're using classic start menu, this option doesn't exist.
You can set policy in registry though:
In HKEY_CURRENT_USER\Software\Microsoft\Windows\CurrentVersion\Policies\Explorer
add new DWORD value NoRecentDocsMenu
Set value to 1

Cyberscrub (http://www.cyberscrub.com/products/privacysuite/?clicksource=boxtextnav)
It shreds your files and tracks to Department of Defence (DoD) standards.
