I have an Asus P5Q-E, which can do Raid, but I apparently shut the barn door after the horse got out, as even if you're NOT doing raid at the moment, the initial drive has to be designated as such before you load Windows, etc on it. (Thankfully, I got it working again by doing 'windows repair'....not trying THAT again :uhoh) Anyhow, I have a 2nd Sata drive with partitions set up exactly the same as the one I use....how hard is it to copy every byte of info off my primary and make this second drive a boot-able, exact copy?

It's very easy. Not sure what types of Drives you have but both Seagate (Seatools) and WD (Data Lifeguard) have toolsets that will mirror your entire drive over onto another. They should be available for free download on their sites.
If I'm not mistaken you'll have to mirror over one partition at a time.
