just wondering how to use the Coax on the panzer - i cant seem to find the button to use it.  Also how do i switch between AP and HE round

You have to map these commands in the Keyboard Mapper.  I have had the same problem.  To switch between HE and AP, you also have to map that command.

Right, for the machine gun go to stickmapping, then under Gunner, select a trigger for Secondary weapon.
