... in game, can it be increased?
I have noticed this issue for many years now, but frankly, the more time I spend playing other games the more apparent it becomes when playing Aces High.
For example: If the enemy start to change direction rapidly (stick stir) it's almost impossible to calculate any sort firing aspect, not because I have poor hand eye coordination, but because the plane just appears to change direction with little to no apparent transition.
I would like to hear opinions on this topic. If I'm wrong and you don't agree with me then please feel free to call me crazy.

I agree with Kazaa on this one. I couldn't count how many times ive been on someones 6 and as I fire the nose straight down or any other direction. Makes it very hard to take a shot. I know its online and packet transfer BLAH BLAH BLAH.

There is a setting radarupdaterate but that may only effect the dots on the clipboard map not the actual plane position in-game.
IIRC default is 5 [ seconds] for that setting. In KOTH I know we usually lower that a notch or two as we rely on dot dar for finding the next closest fight to engage.

Baron if they are avoiding your attacks by using stick stirring as an evasive maneuver then you are too close to your target. start doing yo-yo's behind your target. it will help you maintain your speed while you opponent loses theirs and it will also help you gain separation to allow for angle attacks.

190's are the worse & people use them just for the stick stirring ability to get away.

Or would rolling 90 degrees, pulling back some, rolling again, pulling back, rolling, then pressing forward to evade an enemy be considered stick stirring as well?

unfortunately Eskimo i think the definition of stick stirring will cover any evasive maneuver employed in a successfull manner which allows you to avoid and defeat your opponents attack. Stick Stirring will have as many definitions as there are people who get upset because they missed their shot due to their opponents unwillingness to fly straight and "take it like a man".
in my opinion, i think the truest definition of stick stirring is gonna fall into the area of anyone whose motions with stick and rudder are so drastic, dramatic and rapid that they;
1 lose so much E and forward momentum that you unintentionally hang in space without the ability to maneuver at all
2 lose control of their ride and tumble through the air taking an exaggerated amount of time and alt to regain control, if you manage to regain control at all before you auger in or get shot to pieces;
3 have their controls lock up and they get the "do not move your controls so rapidly" message
now obviously there are other occasions that would not be considered stick stirring which would cause similar effects, i.e.the F4's ability to hang in space, improperly scaled stick and/or rudder giving unwarranted warning messages, maneuvering in a damaged ride etc etc, but if you are in a close up fight and your actions of evasion cause these effects unintentionally then to me, you were stick stirring and paid the price for it.
well that's my own opinion and is worth just that.

To me, anything you can get away with in a real plane is not stick stirring. What IS stick stirring would be like pushing and pulling the nose up and down so hard and so fast that a real pilot would burst the capillaries in his eyes and/or crack the canopy with his skull - or twirling the joystick around in fast circles as if you're whipping cream.
Some legitimate maneuvers may appear as "stick stirring" due to Internet lag and the smoothing code the game employs.

Kazaa I suspect those of us playing from distant shores sometimes see things that US players never encounter. I'm in a constant state of astonishment that the system works so well, considering we log in from all around the globe. I've noticed the update issue from time to time, although in the WW1 arena where I do most of my flying it seems much less of a problem.... not sure why but probably something to do with the relatively sluggish performance of the ragwings (less movement to plot?).
As for players using an artifact of the gaming system to gain an advantage (as opposed to simply 'flying the aircraft') I'm guessing that won't go away in a hurry, human nature. For me personally, I'd sooner lose a fight than exploit a hole in the code or a glitch in the network. If I die it's as a virtual pilot, which is better than surviving as an astute gamer.... those guys eventually get bored with flying and move on.
