I was looking that the Radeon HD 6870 1GB and considering upgrading to it. ($250)
I also have a ATI 5750 1GB but it's SLI compatible but a second 5750 costs ($140)
Would I get better performance out of a dual video card 5750 setup or a single 6870?

Caveat Emptor of course. But this thread seems to indicate that the single 6870 was marginally faster than two "dramatically overclocked" 5770s, let alone 2 5750's.
