Title: Offline Terrain

I seem to have suffered brain failure and forgot how to switch the terrain in offline mode  :bhead :bhead

Options->Arena Setup->Environment->Change Terrain

I tried this and "Change Terrain" is greyed out.

It's done before you enter the offline arena.
