any of you guys got any decent recipes?
Here is a "NO Salt" Recipe I make for my dad.
15 medium tomatoes
1/4 cup "blackstrap" molasses
1 clove garlic peeled and crushed
1/2 cup sugar
2/3 cup vinegar
4 Tablespoons Liquid smoke.
Various spices to taste.
cut stem sections of tomatoes off and par boil them for approx 3 min in boiling water, just enough to loosen skin.Cut into quarter and peel and deseed them.
combine all ingredients in pan over medium heat and bring to slow boil. (if you have one, use a hand blender to purify the mixture)
Blend on puree until liquid.
Put back in pan if you had to remove it to use blender. Cook over low low heat for approx 4 hours, stirring occasionally, or until it simmers off most of the water. I like my BBQ sauce to be a little thick so I cook it a little longer.
Using a fine mesh sifter you can get out the seeds that you missed and make it a little smoother. ( I do this to make it look better also)
Let cool approx 1 hour before putting in a bottle.

I made a really good one using brown sugar, allspice, and fresh crushed pepper, my ribs ended up tasting like breakfast sausage. Only thing that would have made it better would have been a stack of pancakes to go with it.

Sounds like that white man's version of "chicken and waffles"...

I knew an old dude that made killer BBQ sauce, but would never give away the recipe. It was a brown sugar and A-1 sauce base, but beyond that I couldn't say. But I can testify it's the best I've ever tasted, bar none.
