Title: Modifing drones/making training missions

In practice missions/offline play is their any way I can make the planes dogfight and not just circle in a luffbary?

No you can't make the planes offline stop circling the field but you can download offline missions (there is another topic thread for it in the forums) & the AI planes do maneuver in more of a challenging way.
