Sometimes our planes do explode if you shoot them.

No, it is not. The explosions they are referring to are pilot kills.

I know that if you hit the pilot the plane explodes. But can the plane explode from not hitting the pilot in AH. I've had some shots that really didnt look like I hit anywhere near the cockpit and have seen my target explode.

i as well, you can pilot kill aircraft at different angle but round still find pilot.
