Title: Bacon Recipes
Post by: Dichotomy on February 07, 2012, 11:05:03 AM
Anybody got any interesting bacon recipes?  I'm feeling the urge to try something different this weekend.

I prefer to bake bacon rather than fry it.  I've found it cook more uniformly, whereas frying the bacon will curl up and cooks unevenly.

They way I do it is line a cooking tray with foil (for cleanup after), and lay down the strips.  Place the tray in a cold oven, middle rack, and set bake temp at 400 degrees.

After 10 mins or so I pull it out and flip, drain any grease to a can I keep in freezer.  About 10 more minutes and it will be done.  Towards the end keep your eye on it, there is a fine timeline between too crispy and just right at that temp.

Get a can of whole Jalapenos.  Split each in half and remove the seeds and take out the inner white vein.  Leave them in if you like it hot.

Take cream cheese and fill each half.  Take a half piece of Bacon and tightly wrap it around each of the Jalapeno halves.  Put in an oven on about 350 degrees.  Bake for about 15 to 20 minutes until the bacon is cooked to your preference.

Some folks will put a Shrimp with the cheese then wrap it in Bacon.  I don't care for seafood, so I have never tried it this way, but friends of mine that do like seafood love it.

Before eating, make an appointment with your Cardiologist.  After eating these you are going to need it, but boy they sure are good.

Final note, I have found using the cheap thinner Bacon works better than a premium thick slice.  The thinner Bacon wraps easier, but if you want to use the thicker stuff, you can use a tooth pick to hold it together.

Enjoy

When I BBQ (charcoal) after the initial flame die down I put bacon on the grill to help the coals get good and hot.  Once it's done I take it off and put on the meat (and enjoy the bacon while BBQing) it is rather excellent.

Here's two.
1 Cut fresh asparagus stalks in half, wrap in bacon and skewer. Grill to the side on a hickory wood fire.....yum.
2. Wrap 1 to 1 1/2 inch cubes of your preferred section of deer meat in bacon and grill them on skewers over hickory. Lord have mercy, your tongue will jump outa your head for em!

I've done the bacon wrapped jalapenos numerous times.  I've even done shrimp wrapped (which were mighty tasty by the way but a PITA because prawns weren't available)

But I think I'm going to try this one since you have ALL failed me thus far

    1 cup brown sugar
    2 tablespoons chili powder
6 -8 slices of uncooked bacon

Directions:

    1
    Set Oven to 400 degrees.
    2
Mix brown sugar and chilli powder together in a bowl.
    3
Coat your bacon with the mixture. Making sure both sides or pretty much evenly coated.
    4
Put your bacon in a pan and bake at 400 degrees for 20 minutes. Your bacon will come out crispy and sweet.

I enjoy bacon, brown sugar, apple pie spice, and nutmeg baked and sampled with apple pie.
