Title: Pickled Northern Pike

I've tried several variations, but this one is the best. I got it from a friend at work. This is enough for one medium sized nard.

Brine ingredients:

2 cups white vinegar
3 cups white wine
1.75 cups sugar
4 bay leaves
5 whole cloves
1tsp whole allspice
2tsp mustard seed
1tsp whole black pepper
Bring brine to a boil and then refrigerate until cold.

Preparation:

1) Soak cut up fish in 1 cup pickling salt and 5 cups water. Refrigerate 24hrs.
2) Strain, rinse w/ cold water, repeat 1st step for 24hrs.
3) Strain, rinse w/ cold water, cover with white vinegar for 24hrs.
4) Rinse fish, layer in jar with cut up white onion, fill with brine.
5) Let set in refrigerator for 7-10 days. The longer it sits, the better it is.

As you can see, I've been snacking pretty hard on this tasty treat. Enjoy.

My old man was a Swede and I grew up eating pickled pike, deep fried smelt, smoked chubs, all kinda things with fins. I think pickled pike was my favorite tho.

That looks yummy. :)

Now if I can just find a recipe for pickled eggs like my dad used to make- all the ones I find are either disgusting, or consist of nothing more than 'put eggs in vinegar'.

Pickled red beet eggs    :aok

Red beets and vinegar, little sugar if you want to knock down some of the vinegars "tang"


Not sure id like pickled fish.....but would definately try it...pickled anything is usually really good  :)

No reason you couldn't.  The reason things like pike and herring are what you hear of pickled most often is because they're bony fish and you can pickle bones in.

I'll bet one could add a couple of slices of Serrano pepper.
