I was in a dogfight the other day and had a nice plan view of the enemy plane and took my shot. I strafed through the wings and noticed I took out one of his landing gear. Shouldn't that take a wing off also? How does the modeling work for this?

A wing would be lightweight thin aluminum. The landing gear would be made of some thick materials to stand up to forces involved in touching down on runway thus absorbing some of your ammo.

Each destroyable part has a value. Each time a hit is registered, whether from ammo or collision, the calculated value of the damage is applied to the destroyable part involved. Once the damage threshold is reached, the part is destroyed. Depending on the part involved, it could result in pilot death, a wing falling off, a gear falling off, etc.
Sounds like your bullets were hitting the landing gear and not the wing; they are two separate "destroyable objects".
