Its a cottage pie using beef, my mother's family was poor growing up so they altered dishes to make them "Cheap" - after having different traditional shepherds pie's - I could never switch away from this recipe.
1.5lbs of ground beef cooked brown and drained
Pour two cans of Cream corn over the ground beef in a casserole dish (Demonte or a good quality cream corn)
make unflavored instant mash potatoes and evenly place it over the cream corn and while the mash potatoes are hot spread butter over the top evenly (half a stick generally works)
broil it until golden brown (usually less then 10 minutes as you are simply crisping the top)
Serve with a splash of ketchup - cheaply done but comes out quite delicious :)

We have enough left over real mashed taters and I think I can find a pie crust or 2. Think I'll pick up some lamb on the way home.
1 tablespoon olive oil
1 teaspoon black pepper
1 lb ground beef or 1 lb lamb
1 large onion, finely diced
3 -4 large carrots, finely diced
1 cup frozen peas
3 -4 sprigs fresh thyme, finely chopped
2 tablespoons flour
1 tablespoon butter
1 glass red wine
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
1 cup stock
1 large quantity mashed potatoes (estimating 1L or 6 cups, fresh or leftover)
1 egg, beaten
grated parmesan cheese (optional)
Directions:
1 Pre-heat oven to 200C/400°F.
2 Saute carrots in the olive oil until starting to get tender.
3 Add in the onions and saute for a minute or two then add the meat.
4 Season with black pepper and thyme.
5 Cook until browned then drain fat.
6 Add the butter and peas.
7 Sprinkle with flour and stir through.
8 Add tomato paste, wine and Worcestershire sauce.
9 Let this reduce slightly then add the chicken stock. Allow to reduce down until you have a thick meaty gravy. Season to your taste.
10 Remove from heat. Grease an oven proof dish** (9x13 works for me, as does an oval baker) with butter and add the sauce.
11 Spoon or pipe the mashed potatoes over top. Brush with egg and sprinkle with Parmesan cheese if using.
12 Bake for about 20 minutes or until the potato is nice and browned on top.
13 Serve as is or with some crusty bread to mop up that yummy sauce!
Forget the 9x13, I'll par-bake the crusts then fill, top with taters and bake.

Awesome :aok

Whats in a Shephard's pie?
I'll guess sheep with something else??? Sorry we don't have shephards or their pies where I live.
-
Shepherd's Pie is lamb, best is made from left over Sunday roast, but minced lamb will do, very well
it is cooked up with gravy then topped with mashed potato & baked to make potato crispy
cottage pie is beef , generally mince like shepherds pie but old roast beef is good, topped off with mashed potato..
both firkin lovely...
expand your local cuisine and have some great pie!
share world food!

Sir believe me, I've had my share of burgers. I'll still stick with a Cheese Steak :aok

I can't get fresh lamb where I live. Could I use ducklings?
-
Yes but don't leave the beaks on :old:
-
:rofl
-
you need to add cheese to the potato if using ducklings...
it is a slightly different dish
round my way they call it Cheese & Quakers

:)

I'll probably go with beef then when I try. We do have fantastic beef here in Iowa since it's cheaper to feed them corn than grass.
Somedays I miss being a butcher.
-
google a recipe for game pie - duck, beef & chicken would be good or rabbit maybe ... pretty much anything with fur or feathers will do :aok

Thanks Jimmy. It's a slightly modified version of the recipe I posted on the previous page. I added roasted corn and mushrooms to the filing and added thyme and garlic to the potatoes while they cooked.
Between making the mashed, grilling the corn, and the rest of the prep, it was 2.5 hours before they were done. (I made 2 pies, one venison and 1 beef) I doubled the recipe so I have mix for 2 more pies I'll freeze for another day. :aok
While the taters were cooking, I had a few beers with my grill and the Cabernet was used for the recipe.

wow
dont know much about grilling corn
does it make it nuttier....my first thought, not quite sure why
sounds scrumptious
obviously keeping well lubricated during cooking is part of the fun,
seems like you love good food, me too
I figure you eat everyday, make it amazing, it can only add to your day
it takes a bit of effort but not much and is it effort if you enjoy it,
eating, friends and a roof over your head...thats life....do em well and its a great life
<S> Jimmy
-
Not nuttier per se, but it would compare pretty closely (I imagine) to the difference between a grilled burger and a boiled one.
I normally only use the grilled corn for cooking or salsa since it tends to dry out a bit.
