Does anyone have any favorite rinsing or soaking techniques for the kidneys?
I have heard salt water, milk, etc.
Other sources have mentioned having the butcher prepare them properly and no rinse or soak is needed.

Ahh steak and piss filter pie... One of the things I don't miss from my time in the UK. :P

Liver, Kidneys and Sweetbreads...soak them in milk. It will draw out and nuetralize the "gamey" flavor and the acids will break it down and tenderize it.

It is only awesome if it doesn't taste like piss when I bake it.
I may wait a while until my new stove is finished and ships. It is going to be a few weeks, yet. :furious

A good home-made Kate and Sidney pie is delicious along with some green beans/peas and mashed taters.
Check out several recipes online. I don't soak the kidneys in milk because it tends to add a burnt milk flavor. Use veal, lamb or young beef kidneys. Just rinse them off good and trim off the fat, membrane type stuff. You can soak them in a kosher salt brine in the fridge for an hour. You can also put them in a pot with about an inch or two of light brine water, cover and boil them for about 15 minutes then let cool before cutting into chucks and proceeding with cooking.
They are gonna stink when you cook them.
