I hope that you will include an ability to use multiple joysticks as with Cliffs of Dover and FSX where I am able to map to joysticks. At present the game recognises both sticks but will only accept inputs from either or but not both

Are you saying in Options->Controls->Map Controllers not all of your sticks are listed in the drop down list at the top of the dialog?
Multiple sticks should work fine. You will have to program the secondary sticks with the inputs you want mapped, but they should all be listed and selectable in the Map Controllers panel.

We support multiple sticks, but what is it you are trying to do?

I have 3 sticks hooked up and they all work at the same time.

Went in and mapped a throttle control on two different sticks and controlled each engine of a P38. No problem at all.

I could choose the same functions for both my T16000m and TopGun Afterburner II. On the other hand I only tested with one button and two functions.
I'm trying to figure out what you mean... If you can select any of the sticks, you can assign functions to it. By selecting another stick you won't eliminate your first choice. I suppose there's exceptions which I can't remember but they're rare.

You select the stick to program it. After it is programmed it will work as long as it is in the list. However, you cannot program the same axis function to different devices. Only one stick can control pitch for example. So the buttons and hats on both sticks will work but the sticks have to have different axis assignments.
If you want to be able to fly with either stick just use the modes and set a different stick to control pitch and roll in each mode. Copy mode 1 to mode 3 then set the axis assignment you want in mode 3. Set a button to switch between modes.

I use a Thrustmaster Warthog HOTAS stick, a CH throttle and rudder pedals and have no problems BUT when I add a SAITEK trim wheel for RPM adjustments, I have problems. Screen freezes about every 5 to 10 seconds and it sucks because it is a nice way to adjust that parameter. So it gathers dust next to my TM warthog throttle.

That is correct. Like FLS said, that is just for programming the functions to each stick, configuring input axis curves, deadband, damping, and so on.
After they are all programmed, they all work.
