I usually let got my opponents once they are smoking and trying to get out of the fight, I tried also couple times to pull right next to the to salute with a wing shake... but mostly all the people are after easy kills..

Not even close to the same thing. I'll kill everything I can in the game every time I can. Those players will be able to see their family and have a long and happy life every time they die from my guns.
I do love the story you posted. But to compare that type of chivalry to our game:

There's a great anecdote from Norbert Hanning's book about an engagement over Kursk where many planes from Jg 54 struggled to down a Yak-9 being expertly flown. Walter Nowotny called out to the group over the radio to let the Yak egress safely as the pilot earned the right to fly another day.
