Is an F-18 really able to acclerate away from a camera plane that quickly, or was that a bit of movie magic (filming a very high frame rate then accelerating the play speed to prevent low quality)?

It was a simple FF.  You'll notice this with the gyro-camera on the nose and the overall movement of the camera plane, and the background.  Pay close attention to the ground. :)

A lightly loaded Super can go from zero to 140 mph in a matter of seconds.   It's transonic acceleration is not the best in its class, but still quite good.   Put the coals to it and it's going to walk away from an L-39 without trying.   But yeah, they definitely fast forwarded it.   Look at the movement of the wing of the camera plane relative to the horizon.  You'll notice the playback speed increase.
