This is what suffering looks like on the Carnivore Diet.  Day and after stinkin day.  I'm a martyr.

Beef ribs.  Sous Vide for 48hrs @ 140deg.  Smoked in oak chips 1 hr.  Final bark put on with the Searzall.  Not some little panzy Creme Brulee torch!

But it had enough fattyness that I was thinking a nice tangy Jack Daniels BBQ sauce would have been a nice final touch.  It could use just a touch of acidity to balance the fat.  But I can't have the sugar.

I might put try some apple cider vinegar in the drip pan next time to add a little twang vapor.

Pretty much.  As close as I could get without actually tuning it in to gelatin.  I like a little structure left. I don't want to turn it into goo.  :D 

It held on if I picked the bone up, but most of it came off as I tried to take a bite.  All the inter-muscular fat was perfectly rendered.  I might could have gone a touch lower temp to 134deg for a touch more rare, but I might have had to add another 8-12 hrs to get the same tenderness.  I'm not sure that would have added anything to the flavor.

Like I said; the only thing between this and perfection would have been a little sweet tangy sauce (maybe with a little heat).  The vinegar acidity of BBQ sauce balances out the fattyness, but I was just foregoing the sugar. 

Like I said, I'm a martyr.  ;)


So.  Show me what you got beotches!

The reason I asked I wanted to estimate how much your one-hour smoking cooked the meat. this lets me adjust the sous-vide temp to a system that I use for cooking pork ribs.

Yeah.  I was afraid the smoking would over cook it.  That's why I only did an hour.  I just wanted to flavor it a bit.

Now these were beef ribs which I would assume would require a lot more time in the SV than pork ribs.  Beef ribs have a lot more connective tissue that needs to be broken down.

What do you normally do pork ribs at?  I would guess pork ribs would be more like 12hrs @140deg.  Do you have the book "Sous Vide for the Home Cook" by Douglas E. Baldwin?  It's an excellent resource.

[Edit] I had considered SV then chill and refrigerate over night then smoke it cold up to serving temp to get more smoke time with cooking further.  I haven't tried that yet.

[Edit 2]  I also want to try smoking first, then SV.  I suspect raw meat will take the smoke better.  Who knows.

Regarding [Edit 2] they used to sell "lightly smoked pork fillet" some years ago. It had a pretty tan, not dark at all and the smoke flavour carried through cooking. And it was still considered as raw meat, it had to be cooked. Can't tell if raw meat takes smoke better or worse, at least you won't get smoked glace.

It's not for everyone.  In fact, I wouldn't recommend it for most people.  I consider it a form of fasting.  I call it meat fasting.  ;) 

But the Standard American Diet doesn't do so well either.  LoL

I was just running a bio-hack experiment. I've done well on low carb before.  My body seems to be ultra sensitive to carbs.  I was considering trying Keto after the new year but decided to go full carnivore for 3 months.  I had a full blood workup a couple of months ago, I wanted to get another after after 3 months of Carnivore and just see first hand what the data looks like instead anecdotal arguments pro and con.  When in doubt, don't argue, just measure.

Sadly I can't go in for a blood work right now.  It's not worth the exposure. I'll have to extend the experiment and get data later.

However some things I can measure myself. 

Down 25lbs in 3 months.
BP went from 186/38 to 124/77.
Glucose from 118 to 98.
Joint pains that had been getting worse over the years, gone at the moment.

I'll eventually transition to a more conventional Keto diet.  I just thought it would be an interesting experiment.

Of course they said the same thing about basic low carb eating 10 years ago.  Now its widely accepted that people need to limit their glycemic load.

Remember when they all told us we should be eating transfat margarine?

Hmm.  That doesn't look right.  But that's what I had written down.  :O

Or maybe I can't read my own writing.  :rofl  It was high. I know that.  Dr said we would eventually have to discuss BP medicine.

Anyway, the 124/77 if from last night.  I can live with that.

it's the bottom number that is the problem.  think it's more like 88, you probably spilled some a1 sauce on there paper. another reason why you shouldn't use it.

Nope.  I definitely wrote down 38, but that is obviously wrong.  I wrote it down when I got home, but either miss-remembered what I heard or I bet I transposed it.  I bet it should have been 138/86.  That would be more reasonable. 

186 would be nuts. LoL.  It was getting high, but the doctor wasn't panicking. He was just warning me that if I didn't improve it by next visit through diet and exercise, he was going to start recommending some pills.   And I don't want to get started down that road.  That was 6 months ago.

The moral of the story is, unless you have a specific genetic BP issue, I believe just dropping weight can drop your BP to more reasonable levels.  And for me, it must not be a salt problem, because I am getting a bunch of sodium now (bacon, bone broth, etc).  In fact, in the first month I was supplement above my dietary intake to fight the Keto Flu.  But I do know a guy who is highly salt sensitive with his BP, so again genetics play a big role too.

Hmmm found some more food porn on my phone from last year.  I had gotten pretty good at homemade Sushi.  Found a store on my part of town that sold sushi grade fish.  A LOT  cheaper than going out.  I'd make it about once a week or so. 

I can live without pizza, but I do miss my sushi carbs.

I was full blown diabetic when I started talking to the Peterson's (Jordan and Mikhaila). At the point I went into the carnivore diet I had been on pure veggie diet and water for a month. Then I went full blown raging carnivore. The diabetes is in full retreat, but the doctor insists I stay on the medicine. Insanity. Avoid soy. It's fillers like that which are making people sick, I'm convinced.

The best meats for me are elk, moose, bear, and buffalo. One of the reasons I want to start flying floats is so I can get into Alaska and hunt the best meats.

Nevertheless, as you said, it wasn't long ago that people thought that high-carb was the way to go.  And there are the veggie diets, the starvation diets...These fad diets come and go.

LoL.  I'm used to it.  It doesn't make a dent.  I've heard everything from "you're a moron" to honest concern for my health. And that was just my Mom and Dad.  :D

Like I said.  I may not do it forever, but it might be something I go back to from time to time as a detox/reset.  Like fasting.  I've done some fasting and I think that is very therapeutic in short duration of not much more than a week or so.  I've done 5 days a couple of times.  But fasting is really hard for most people.  I think this has some of the same benefits, but I found it a lot less painful.

It's not a religion for me, but is has been an interesting experiment.

Look up "Meat Eater" on Netflix. If all you eat is beef, then saddle up near a cattleman and offer to shoot any coyotes he's bothered with. Before you shoot any, though, make sure you have an avenue to have the carcass processed. I hate reading about dead coyotes in a ditch anywhere.

It's funny how attitudes differ across the country.  Where are you from?

In Texas, you can't kill enough coyotes for most peoples taste.  I've never heard of processing one.  Unless you call hanging their carcass on your bob-wire fence to rot as a trophy "processing".  ;)

You used to cut their ears off and take the to courthouse and get paid.  They didn't care what you did with the rest of them.  :rofl  I'm not sure if they still do that.

The only thing they want you to kill more off without mercy than coyotes is wild pigs.  At least in Texas.

Are there humans that would eat a coyote?  On purpose?   :bolt:

Yes, you can find videos about it on YT. Me I just meant for the hide. Despite the fur fears and hatred there are still coats made from coyote fur, and why not? To me it's not worth processing the hide for the $50 pelt reward, but if I can make someone happy by offering free carcass, why not? The standard AR in .556 works great even suppressed, but cattlemen may still have concerns until they know you aren't trigger happy. I hunt coyote primarily in lower Alabama, but also anywhere else in the panhandle that is having a problem. I started doing this because our neighbors cat disappeared and I found the kill spot in my front yard, really just the fur scattered in all directions. I have cattle now, so the concern was real but also for my kids. I think I have them exterminated for 100 miles or so, but it's hard to tell because Alabama does not allow hunting at night and our game warden discourages me from even stalking at night. I have game cameras up and nothing has been triggered except a panther and hogs passing through. Nothing makes you more nervous than the thought of a panther in the area when you're belly crawling for coyotes with a predator call.

I have 15 ac about 50 mi SW of Ft Worth with a weekend cabin.  My neighbor has 90 ac fenced with some kind of fancy antelope or something.  He has a constant battle with yotes.  They always find a way in even though its surrounded with 9ft fence.  He has invited me for some night culling.  He has night vision scopes. 

I've heard them somewhere on my property at night yelping.  They give me the creeps.  They're cockroaches with fur.
