Biggest single change to immersion is sounds. While the AH default sounds are ok, Mitsu's sound pack rocks.

Someone also made a sound pack for hit sounds while in your chute.  They took the bullet- whacking-into-flesh sounds from Counter Strike (I think) and turned them into AH named files.  Search the Sounds forum for eject.zip.  It certainly makes you wince when you're in your chute and an FDB is around.  :)
