Any of you budding BBQ chiefs got a nice sauce recipe?  Either one to brush/dip before cooking or one to dip in after cooking (or in my case, burning!)...

Believe it or not, I got this one off the web, tried it, and its all we ever use anymore, its of the "Kansas City" sweeter side of the BBQ sauces...


1/4 Teaspoon Allspice
1/4 Teaspoon Cinnamon
1/4 Teaspoon Mace
1/4 Teaspoons Black pepper
1/2 Teaspoon Curry powder, oriental pref
1/2 Teaspoon Chili powder
1/2 Teaspoon Paprika
1/4 Cup White vinegar
1/2 Teaspoon Hot pepper sauce
1 Cup Ketchup
1/3 Cup Dark molasses

Place all of the dry ingredients into a bowl. Add vinegar and stir. Add remaining ingredients and stir until mixture is thoroughly blended. This sauce may be served room temperature or heated.

Yield: 2 cups

one I like

1 cup ketchup
1/4 cup cider vinegar
1 Med. onion and 4 cloves garlic
1 can diced roasted ortega green chilies
1 or 2 halberno or scotch bonnet chilies
1 tbl chili powder
1/2 tsp. paprika
1/4 tsp. cayenne pepper
1/4 tsp. ground cloves
juice of one lime
1/4 cup buckwheat honey

chuck all the dry stuff into a pot with the vinegar.
put onion garlic and chilies in a blender and process till you get the consistency you like. fry em in a little butter till they are all limpy.
stir em into the vinegar pot and bring the whole mess to a boil.  lower the heat and add the ketchup and honey, simmer till it is the consistency you like the longer you simmer the thicker it gets.  Take off the fire and add the lime juice.  If it aint hot enough add halberno pepper sauce till it is.

This is a marinade/basting BBQ sauce:


1/2 cup honey
1/2 cup Jack Daniels
1 cup very finely minced onions, yellow or white
2 cloves garlic, finely minced
2 bottle of cheap bbq sauce(I like Heinz hickory)
1 teaspoon ground mustard
paprika and blk pepper to taste


mix it very well, for marinade dilute it with about 25% water, for basting use it straight.


This is a modification of Ruth's Chris' steak house marinade.

Thanks for the tips guys, it's much appreciated!  It's my sisters birthday on Friday and we may do a BBQ on Saturday if the weather is okay and ever since tasting RAF Mildenhall (USAF) BBQ sauce I've wanted to try and get some 'home made' sauces rather ones from just a bottle! :)

Here's a steak seasoning ya might like can used as a marinate or in place of plain ol' mustard and ketchup.  good for upto 3 lbs of steak.


2 tblsp hot prepared mustard

2 tablespoons of olive oil

1/2 tsp curry powder

1/2 crushed clove garlic

just a pinch of black pepper

1 tblsp brandy

1 tsp soy sauce (optional)



Mix well of course :)

Heck, I live in KC and I use bottled sauce.

Of course, they're bottled locally :)

Either Jack's Stack or Gates....... both very good.
