uuuhhhmmm, the convergence settings shouldn't change. once you set your convergence settings for that plane, it stays the same until you change it again or reinstall AH.
for example, you up a pony with 300 for convergence setting, get shot down, up in a pony again then your settings would still be 300.
i hope that this would help, your post was in need of details though.

Did you copy your settings directory over from a CD you burned? If so, all of the settings files (including convergence) will be Read Only. Any changes you make to them will be temporary until you remove the Read Only attribute.

Well I never have that problem. What I do is I often change my convergence anyways, especially when the battle gets thick. I'll change the convergence for the type fight I'll be in. Anyways, thats my 2 cents on how I handle convergence ussies. I simply reconverge the guns from time to time.

The convergence settings are definitely buggy. I have posted about it before too.
Even though they save after I close the game I have had them change at random while in the game.

ditto... particulary for the pony...
i've never burned from disk... only the usual update installs from HTC...
yet... i find my pony guns convergence changing every so often, so i get in the habit of chekcing now and then... only seems to happen with pony. and fwiw, the p51d.cfg file is not marked read only.
occasionally the guns selection on a spit will change from .50's to the .303's.
never had a problem with the la7...
