It's best to sautee it at low temperature using olive oil. After the skin is lightly browned add:
1 clove crushed garlic
1 small chopped onion (not too finely chopped)
2 cups white wine.
1 tps fresh dill (optional)

Simmer for 20 min until the wine is reduced , then add 2 tsp of salt and 12 peppercorns.
Continue simmering (covered) for another 15 min then add 5 quartered roma tomatoes. Simmer for another 7 min.
Present over a bed of pasta.
