Found this site, it covers most of the basics of air combat.

It also has diagrams for the retards like me who have to learn visually.

You can also get the book "Fighter Combat" by Robert Shaw. Covers just about everything.

You'll find here a lot of useful stuff from real fighter pilot ( and do buy Shaw's book!)
