Title: Chili Recipe

Ack! I had a recipe that I loved and I just can't find it... was on this ratty piece of paper and I never put it on the computer...

Anyway... lots of beef, pork, italian sausage and the only added liquid was Mexican beer.

I've given up... I'll never find it again... anyone have some good recipes to share?

Oh... NO BEANS (if it's got beans in it, it is not chili, it's soup).

Ingredients:

•   Meat Options, 3#’s of the following:
•   Ground Round, Ground Pork, Chopped Steak, 1 Brat, Sausage Links

•   2 Tablespoons Vegetable Oil
•   3 medium yellow onions
•   8 oz. seeded and diced jalapeno peppers
•   3 to 4 cloves fresh garlic (5 to 6 cloves minced)

•   Optional: 1 to 2 cups corn

•   28 oz. tomato paste
•   30 oz. chili beans

•   Optional: 1 can of beer, 1 cup of coffee

•   4 bay leaves
•   1 tablespoon oregano
•   “         Cayenne pepper
•   “         Ground cumin
•   “         Black pepper
•   2 tablespoons salt

•   Optional: 1 teaspoon mustard, 1 tablespoon cinnamon



 
DIRECTIONS:


   Brown meat in separate pan and add 1/3 to 1/2 cup chili powder.


   In the large pot add:
•   2 tbsp. vegtibele oil
•   3 medium onions diced finely
•   7-8 oz. jalapeno peppers
•   5-6 cloves garlic (3-4 fresh)
•   (optional add corn)

   Simmer vegetables until golden then add beef to mix.

   Add:
•   28 oz. tomato paste
•   30 oz. chili beans
•   3 cups water

   Cook 1/2 hour on medium stirring every 5 min. minimum.


   Add:
•   4 bay leaves
•   1 tbsp. oregano
•   1 tbsp. cyanine (red) pepper
•   1 tbsp. ground cumin
•   1 tbsp. black pepper

   Cook 1/2 hour stirring every 5 min. then turn to LOW.

   Cook 45 min. then stir (add 1-2 cups water if needed) then COVER.

   Cook 30 min. then stir.

   Cook 30 min. then stir.



Yeha yeah yeah .. just leave out the beans.

also when adding spices.... optional add tabasco or favorite hot suace. just make sure to do it when adding the last spices NOT before.. it will hose up the flavor of the veggies and meat.
