WAR in the AIR
by Stephen Coonts
ISBN 0-7434-6452-4
"A collection of true aerial combat accounts by the men who fought them, American, British, German, Japanese, all nations."
Into it about a quarter of the way, so far it's a good 'un.
"The best twenty-six stories of aerial combat a person is likely to find." -Sport Aviation

One of my all-time favorite reads is Edward H. Sims Fighter Tactics and Strategy 1914 - 1970 published 1972. Highly recommended as well if you can find it.
