If it's Blu-Ray you want, I would forgo the PS3 route.    You will not get the picture quality that you think you will be getting.   That is, if picture quality is an issue.

I'm looking for the best bang for my buck but price is not the issue.  Basically, the old one will go in a guest bedroom.  If I'm going to toss down some coin I see either just some cheap something or something like the OPPO DV981HD above or something better than that thats a decent value.

This cannot be beat for the price:

Linky

The Integra version of this would be superior in Quality.   Integra is a "hopped up Onkyo" but utilizes better components.   The difference IS noticed for the "typical extra $50" spent for the Integra's.

I've never heard of Oppo, and the review compared it to an overpriced POS Denon.   Also, it is 1080p, this cannot be utilized unless your TV's supports it.   I enjoy Home Theater as a hobby.

As for buy a DVD player with HDMI and not having the input.   The fix is to just buy a DVI/HDMI adapter.   The video signals of the two are IDENTICAL (some will try and debate it).   You would just have to run Audio in the traditional manner.
