If I change to a new video card with the HDMI output [to current HD tv/moniter] , will I loose any of my joystick settings for Aces High?

Your joystick and keyboard mapping are 100% different from your video card settings. One doesn't affect the other.

No, you won't lose your settings.  Basically, all you are doing is changing monitors and then the only thing that is going to be changed is the monitor resolution.

  Is there a big difference in graphics quality when using the HDMI connection on the game?

HDMI = DVI + sound

So if you currently use DVI, image quality will be exactly the same.
But if you currently uses VGA, image quality will be better.
