In the film viewer I cant use my stick hatswitch to look around as I can when ingame - how do I set this up? (I use a compact kb without a numpad for AH)

That option doesn't exist. You can view the action using the recorded views of the person rolling film or those within camera range by clicking on them in the right window displaying players. Other options include internal/external views and gun camera.

Sorry, didn't pay attention to that little detail. I never tried, but do the numbers on the top row work for changing views?

No, they are for changing positions (pilot, bombardier, gunner etc.).
