Deer Sausage, which if you buy from a slaughterhouse is illegal.

Driving thru Penn at night is not far off from deer hunting.

Thanks guys!!

I am having most of the meat made into hot italian sausage, as he was a mature (old) tough bastage...  Got the back straps and loins though.
FYI, I shot him at 1700 and didn't get him to my truck until after 2100.  Pitch friggen black.  I tell you dragging a bloody deer through thick vegitation in the dark in Griz country is a whole new thrill altogether.  And quite a work out.
I still have my Elk tag and will be going out at 0430 tomarrow.  They are the most amazing creatures, never seen a 700 lb monster able to just vanish like a ghost with out a sound....  Or run full bore up a 9000 ft mountain and over the top...
I could have filled my deer tag from my itchen door 3 times as we have a lot of white tails wonder through here but It just didn't seem sporting.
Saw lots of mulies, just not any in the zones my tag was good for mulies.  On of them was a 36"  5x5 with heavy mass, made me drool.   I did get a pic of a decent 4x4 on opening day, here it is.

Thats a nice picture of that Mule deer there. BTW what does an out of state license cost if someone wants to come up that way and hunt for a few days? I know you can go with a guide service but to me that isn't hunting its more harvesting/population control like on those ranches in Texas. At least here in Alabama if you can lease some good land you actually have to work your tail off to kill a deer but you are able to do it and yes its finally hunters choice for the entire season this year in nearly every county in the state. Hunter's Choice meaning you may take two deer in a day 1 doe and 1 buck or 2 does.

Why would a person want pig meat added to deer sausage?  Might as well just eat a big bucket of lard.  I am interested in trying deer steaks.

Is that something a hunter can do himself, or is it always professionally done?

I do it myself.  I salvage all the meat I can and usually cut the loin into steaks.  All of the rest I make biscuit cuts and jerky.  Never leave any meat that can be eaten!

Not sure just how much an out of state licence cost but I think if you want deer, and elk it is about $800 for the whole thing.

The guided hunts around here are not a harvest.  Go with an outfitter and do a 10 day pack trip back into the Selway-Bitterroot wilderness (the largest wilderness area in the world) and hunt from a base camp.   It will run about $3000 but will be a trip of a lifetime.  Some outfitters take the horses and pack mules in ahead as it takes 2-3 days travel to get to base camp and use bush planes to fly clients in and land them in meadows back there.  ANd to hunt elk in the back country you have to be in TOP shape....

Thanks Medic as I said that is something that I want to do one year. I have wanted to go in and do one of those sort of hunts for a while and save up a little for it each year. Maybe in another two seasons I can make that trip up there.

Alberta's, some 26,000 elk are found mostly along the eastern slopes of the Rocky Mountains in the high basins and foothills zones, The elk have been migrating to the boreal forest and parkland regions over the last several years. If you are up for a rugged hunt by horseback in remote camps, you'll want to plan your elk hunting trip in the mountain or foothill zones. If you want to go the "old fashioned way" in a truck, quad or on foot, you'll enjoy the hunts in the boreal forest and parkland zones. Any way you choose, you'll have the opportunity to see monster elk!

Come spend your "all powerfull" Yankee dollars before it's too late....... Our Elk willingly walk up to your truck and hop in before you shoot them...
