Ok, I got my hands on a bag of "Royal Oak" natural charcoal from Wal-mart.  Those coals burned IMMENSELY hotter, but I think I over cooked some lamb chops, or at least didn't do them right.

When all the coals are lit, should I literally pour them to only one side of the grill?  Or do I spread them out evenly over the bottom?
