Yes, Aces High II is natively multi-threaded.

Skuzzy, if I recall AH splits network code to the second core, right?

I've noticed an option in my Nvidia drivers that can specifiy what kind of system you have (single core v. double core) even though I only have 1 video card. I have a 7600GTS. I'm assuming this is for off-card processing (i.e. loading things into the card, maybe?).

Do you know what exactly Nvidia is using the second core for, and will this help AH in any way if I enable/disable it?

At least they have gone back and disabled that multi-threading and made it an option.  Do not enable it for Aces High II.  NVidia is trying to do something that is not supposed to be done in drivers.  It will cause problems with applications that are natively multi-threaded.
