In no particular order:
"Bullitt" (see above)... part of reason I like video from Sheryl Crow's song "Steve McQueen" since they use some scenes from it. It's the first, and still among the best.
"The Chase". It's just funny. The wreck of the truck hauling cadavers is a classic.
"Bourne Identity", The(2002) and to a lesser degree (as far as the chase)
"Bourne Supremacy", The(2004). Biased, as these rate among my favorite films.
The remake of "The Italian Job". Mini-Coopers in the subway and everywhere else.
"Ronin". Just some good work in this film.
"To Live and Die in L.A." Another classic. Led the "against the freeway traffic" car chase.
"The French Connection" (1971) Car chasing a train.
"Striking Distance" (1993) City street chase early in film up and down Pittsburgh's hills while father and son cops have heart-to-heart talk. Personal angle, I grew up a hour east of Pittsburgh.
I'm sure I'm missing something from a Bond film or elsewhere, but these are the one's I remember when I think about a car chase scene.
