Because planes didn't have ammo carriers that moved up with the units. THEY HAD TO FLY BACK TO BASE TO REARM AND REFUEL. GV's typicaly were refueled when needed (just behind the lines if need be, you die if you run outa gas during an attack). And what do you think they did when low on ammo? Did they return to the motor pool? Nope.

if they ran out of fuel would they leave the vehicle behind? (sometimes?)

If needed, they would bumb gas of another tank. Patton had a supply problem durring his big push, and his tankers stole gas from other units. If the trucks came to them, they got the gas.

The attack kept going, but the tank crew stayed behind and waited for supplys to catch up I'm guessing. Wouldn't make much sense for the tank crew to get out and charge MG42's with their .45's.

Yes.

Dedicated recovery units followed to recover/repair abandoned vehicles.  And, when you ran out of gas everyone else ran out of gas around the same time.  Can't "bumb gas of another tank" so well.  It's not the interstate here.

For the most part, if it didn't burn, it was repaired and put back into service.

Cause he was obnoxious and funny, even when not trying to be.
