In order to make sure you have some more nutritious things on hand, I would stock some canned green beans and peas in your collection. Both have very low acidity, and can last for at least a few years. If they have gone bad, you'll know it as soon as you open them. The other thing to keep in mind is that you don't
need to have food lasting 5-6 years. Use your emergency stock as part of your pantry, and simply replace the ingredients as you use them every once in a while. That way, you never come close to expiration dates on things you are saving for a
very rainy day. If #@^ hits the fan, you won't have enough food to last more than 2-3 years anyway.
As was mentioned before, keep your stuff cool and in low humidity to prolong shelf life. Best of luck during the apocalypse, friend.
