g-force and pilot stress

Hi all,
from what i could see in historic films about planes battles, it seems to me that manoeuvres as those performed by us in war simulators were not made in real dogfights. I mean, i think that actual simulators, even if accurate in flight dynamics, do not consider sufficiently the pilot'stress subjected to continuous high g-force and/or shaking (e.i. the possibility to roll the plane suddenly and very fast without any damage to the pilot). I think that a more (much more?) delicate pilot should be realistic; i see however that action would be sacrified in some extent...
What do you think about?

PS I am not a real planes pilot, nor have been in a acrobatic plane, so maybe my presuppositions are completely wrong
