The ability to turn your engine on and off is a normal part of flying. The thrust delay on restart is modeled.It becomes apparent when you lose one engine or apply asymmetrical thrust.

When you kill your engine the prop feathers.

Now I'm actually slightly curious. I've never feathered my prop with the engine running to see if I sped up in a dive, I just assumed the result would be the same.
