Is there and certain flap setting for flying level.

An automatic method for "levelling" is using the auto-trim feature.  Ctrl-X toggles it on and off.  With it on your aircraft will automatically trim for level flight in clean configuration (no flaps deployed etc.) as the airspeed changes.

flaps should only be used when landing, CV takeoffs, and sometimes in dogfights.  Never just to fly level

dude, what are you using to control the plane? Joystick, keyboard, mouse? Also, if joystick, what type? Makes a big difference.

With a joystick, really as long as it works(i.e. no spiking or calibration issues) and is comfortable to use, its good.

First off, make sure automatic combat trim is on(unless you specificly dont want it)  you can turn it on under setup->flight or toggle it with control-x.  

For cruising, using auto-trim is probably best.  You can hit "x" to use auto-level, which keeps the plane flying straight and level.  Also, you can hit "alt-x"  to use auto-climb(actually auto-speed, but the effect is the same)

Most WW2 planes did not, but without these auto features Aces High would have a poor mission/beer ratio.
