I know we have a bunch of barbecue connoisseurs here, so I was wondering if anybody had pork spareribs recipes (rubs or barbecue sauce plus cooking instructions) that they'd care to share.  I've got eight pounds of spareribs just begging for some proper care.

Leave the ribs in the fridge marinating overnight in the following marinade sauce:

1 can of Dr. Pepper
1 can of beer
3 oz bourbon
Generous sprinkling of KC Rib Doctor Rub
1 lemon squeezed
2 tablespoons of brown sugar

Place woodchips in water.

Next day:

If you have a smoker rub lots of KC Rib Doctor Rub all over the ribs.  Place in smoker at 225 degrees...for about 3-4 hours.  15 minutes before removing the ribs mop them with KC Masterpiece BBQ sauce (you can get it at virtually any supermarket).  Do not put the sauce on while smoking.

If you have a BBQ with two grills place the wood chips (hickory is nice) in a shallow aluminum pan on one side of the grill and fire that side up.  (Make sure you have soaked them overnight in water though, otherwise they burn too quick)  On the other side of the grill place some water and beer in another deeper aluminum pan.)  Then, once the temp reaches 225, put the ribs on the upper rack of the grill above the water and beer...do not light that side of the BBQ.

Cooking time should be about the same 3-4 hours.

Thanks for the recipe, Curval!  I might give that one a shot.  I'm not a huge fan of KC Masterpiece though, so I might just mix up some of my own barbecue sauce to slather on at the very end.

Curval im going to the store ASAP to get ribs after reading that. We dont get the KC stuff here but i think i can emulate it closely enough.

4 hours till supper time though. :mad:

Does anyone know what's in KC Rib Doctor Rub?  I've never heard of that product before, and I'm not even sure if it's available around here.  I probably have the ingredients on hand to mix up something close to it if I can't find it at the store.

DMF...I'll get you a rub recipe when I get home...Toad sent me a book which has all the ingedients for all kinds of them.

Someone at work mentioned somthing I cant answer, regarding the cooking of baby back (pork) ribs

Do you boil them before cooking on a rotiserrie or grill?

Should you? How long? Etc

As far as cooking ribs goes, "boil" is a four letter word.

LePaul,

If you were to ask a Texan or someone from KC they would call you a heathen at the mere suggestion of boiling ribs.

That said...if you don't have time for 4 hours of cooking you can boil the ribs for an hour or so and that will make the meat soft as butter.  You do lose flavour though.

Yea...you cant control the temp on a rotiserrie tho for lower heat & longer cooking....but they do a lot of things nicely.

It can be strange for you but for me it's as exotic as chinese beer ... in fact it's more exotic as I've already tasted a chinese beer :)
