It seems most of the fighting is between two countries and the third gets left out due to the way the map is laid out. I tried flying over the center area once and won't do it again. How about some neutral fields that you can capture in the middle instead of those high mountains? That would bring the main fights to the middle of the map but would still allow fighting between just two countries on the fringes. Just make the center area large enough with multiple neutral fields so that there can me mutiple distinct fights in the center area. I'd also like a separate color for each country, the little country symbols are too hard to make out.
Bring on the tanks. Make the center fields close enough to have tank battles. I'd jump into a tank here and there with a flat rate.
