i would say that not many planes provide any more cover than the next.
the hurricane 2c has armour plating to protect the pilot, as does the later model spits, but only from attacks via the rear and bottom.
A corsair has a nice headrest that might help.
from an elevated firing point 190s are extremely vulnerable, as are p51, typh, spit, 110, LA7, Nik and any other bubble canopy or extensively glazed plane.
Bombers afford no protection for pilots it would seem in AH, the easiest way to kill one is to hit it just behind the cockpit from above. *BOOM*
so far i have never seen a GV driver wound, although it is a feature.

PS: why, oh why would you think they were 'neck shots'? 
you could be right, dont get me wrong, but it seems a little sadistic. I would bail out instantly if i was shot through the neck.
