King Ranch Chicken

This flavorful dish has many variations. Our recipe includes its own well-seasoned sauce, omitting the canned soup commonly found in King Ranch Chicken recipes. Yes, it's a little more trouble, but the resulting dish is worth the effort. This casserole freezes well, and will be a big favorite at your table.

3 tablespoons butter
2 large cloves garlic, minced
1/2 teaspoon chili powder (homemade, if possible, but store-bought works fine)
3 tablespoons all-purpose flour
3/4 cup chicken stock or broth
3/4 cup buttermilk
salt and freshly ground black pepper to taste
2 tablespoons butter or olive oil
1 medium onion, chopped
1/2 large green bell pepper, chopped
1 medium poblano, chopped
1 cup finely chopped mushrooms
2 plum tomatoes, peeled, seeded and chopped (or 1/2 cup canned tomatoes, drained)
2 tablespoons chopped pimientos
canola oil for softening tortillas
8 corn tortillas
3 to 4 cups cooked, diced chicken (mixture of light and dark meat preferred)
1/3 cup sliced green olives
1/3 cup green onions, including tops, chopped
2 cup grated longhorn or mild cheddar cheese
Preheat oven to 350°F. Grease a 9x13-inch baking dish or 3-quart casserole.
 
Make the Sauce:

Melt the butter in a heavy skillet over medium-low heat. Add the garlic and chili powder, and sauté for a minute or two. Raise the heat to medium. Quickly sprinkle in the flour and stir to mix. Pour in a small amount of the chicken broth, stirring constantly to remove lumps and allowing the flour to "cook" briefly. Gradually add the remaining chicken broth and the buttermilk and continue stirring until sauce has thickened, 3 or 4 minutes. Add salt and pepper to taste. Sauce may be prepared in advance and refrigerated.

Make the Filling:
 
Warm a heavy skillet over medium heat, add the butter or olive oil, and sauté the chopped onion, green pepper, poblano, mushrooms, tomatoes and pimientos until onion is transparent, about 4 or 5 minutes. Fold into the mixture the diced chicken, olives and green onions, combining well. Remove from heat.

Assembling the Dish:
 
In a small skillet, heat about about half an inch of canola oil. Using tongs, dip the tortillas in the hot oil one at a time, for just a few seconds, so that they are softened. Cover the bottom of your baking dish with 4 of the softened tortillas. Layer the remaining ingredients in the following order:

Half of the chicken/vegetable mixture
Half of the grated cheese
Half of the sauce
The remaining 4 softened tortillas
The remaining chicken/vegetable mixture
The remaining grated cheese
The remaining sauce

Bake for 30 minutes at 350°F until casserole is heated through and bubbly. Makes 6 to 8 servings.

999000 I am heartbroken :( . You have taught me a lot about buffs and I'll always appreciate that. I am also sad :(  that you let someone get to you. You and tatertot are part of the reason I came back to AH and are also the reason I left the Rooks(and my squad of almost two years) to fly with the both of you. I have learned in this game that it doesn't matter which country you fly for as the people in either are basically the same when it comes to tactics, etc. I will not be following you back to the Rooks and I have told Airbat that I'm staying with the Dambusters. I hope that you will come back to us and forget what anyone else thinks of your tactics.
     Now, last night, after tatertot shot me down a couple of times, I was cruising between 39 & 44 and I see two formations of buffs riding the wave tops heading towards 44 so close together that the rear three had to be in the lead's propwash. My immediate thought was that it was tatertot and you. I was riding my A-8 with a full ammo load and called out your location to the rest of the squad. I loop over and come down screaming thinking that I'm going to get my arse handed to me by one or both of you. As I get into firing position, the buffs start firing back. What a lousy shot! What, could it be someone else? After wasting the rear two buffs, I see that I shot down somene else and not either of you. I was totally bummed.
     The moral of the story? It doesn't matter if I'm flying with you or "trying" to shoot you down it's always enjoyable.

I never invisioned my comment and questions that night would have come to this.  Again I will hold out the peace pipe to 999 and apologise for the morons comment.  We have always gotten on well 999 and I would like to bury the hatchet.  What do you say bud...

2Stony, I love flying with tatertot and yourself. I didn't teach you anything.........your a much better pilot than I.  I really enjoy when we are up together ...there no better team orientated pilot than yourself... I think we both play the "game " for the same reasons.

Stony I thinking what happended is not the problem... it simply a symptom of a larger issue.... the names and individuals  are different every night but the same real challenge is there every night..whether some see the problem as the "land grabbers" vs the "fighter jocks" which AW I think ttried to deal with it with a few uncapturable bases.....or whether the problem is people have become so selfish the only thing they see is "whats in it for them" .....the "I" team. or whether their is simply a lack of maturity and true gamesmanship and respect....how many times have we seen someone get shot down ..with someone being in yoour face about it ... or the other side be called cheaters.......
Obviously Mars and I are not the issue....being a teacher ...if through this we have raise awaerness a notch...it is my hope that the greatest game I know will continue to grow. I can be a great community friends and foes alike.   999000

You have shot me down numerous times while I thought I was attacking some poor unsuspecting B-17s. On one memorable occasion you shot down 2 262's of mine in about 10 minutes :eek:
