That's what they said to the 109s.
Except, every 109 expert I ask online comment the same thing. From AH2 beta to the earlier versions, the 109s had that horrible wobbling destabilization at near stall conditions - which disappeared with more recent versions.
Also, at first, Pyro said that nothing with the gunnery changed at all.. and then later confirmed that the 'hit resolution' was just made more precise. Which technically, isn't really about gunnery, but about hit detection... but generally can be considered 'gunnery change'.
Maybe it's something like that with the 190s or 109s too. The "FM", and what it's made of, may be the same.. but something in work has definately changed.
I've tried some fancy moves in the Fw190A-8 during combat. One thing which was particularly difficult in the 190s was the tailslide. You can go straight vertical to about 100mph, but if you pushed it to the extremes, after the plane stalls out, it would fall into a flatspin. Well, that's gone too.
Maybe some of you experts could do it in the older 190s, but I definately could not. Now, I can do it, and I don't think its because I've suddenly become better.
