Breaded? You mean covered with flour?

Try to slice eggplant into "coins" without removing it's skin, cover them with flour, and roast on sunflowerseed or olive or any vegetable oil.

When flour turns gold you can put a slice of cheese on every slice.

Enjoy.

This dish can be cooked even on campfire using any flat piece of iron.

Take Jalapenos, make small cut and take the core out and fill it with cheese. Dip in flours and boil in oil.
Makes wonders with beer :)

It's called fried squash Meatwad. If you think that's good, try some fried okra. Better yet, mix it all together and add some onion. Thank God I'm a country boy.

I've found that adding sugar to zuchini squash works wonders.  Good for fried eggplant too.

A really good squash is summer crookneck.  I don't fry it, but eat it sauteed with onion in a cooking pot with a little Italian dressing.  That is pure heaven for eats.  That and okra and tomatos, which isn't fried.  All those can be eaten raw and they are good.  Especially okra, it is good straight from the garden.

"Tropedoes" from the Topwater Grill: lightly fried, crabmeat-stuffed jalapeņos with a ranch-style dipping sauce.  Add a side of cold Shiner Bock draft.  Consume and feel shivers run up your back until you feel euphoria.  Repeat as needed.
