How do you do a quick screen capture of a paused film in the film viewer? I tried print screen but couldn't find a capture of the paused film anywhere.

Printscreen data ends up in your Windows "capture buffer". You have to PASTE it into something else (like Windows paint) to see it.

For an excellent screen-capture utility and editor (that can capture screens, windows, etc. and then allow you to edit the image and save it in any of a couple dozen file formats), I recommend snagit from http://www.techsmith.com.  I love that utility and use it all the time to create the pictorials I do for AH scenarios.
